Sometimes We Eat Pancakes

Like most moms, I have a busy schedule to keep and a big part of that schedule involves feeding my three kids.  Those kids, however, can be pretty picky eaters.  First, there's my 10 year old vegetarian who really doesn't eat many veggies and rarely eats any fruit.  She's more like a carb-e-tarian.  I do have to say that my middle daughter is pretty easy to please.  She's not big on veggies either, but I don't know many kids who are.  Then, there's my youngest.  She is the "typical" super picky kid.  The only things she is sure to eat are pizza, mac and cheese, chicken nuggets, and chocolate cake.  I'm sure most parents out there can sympathize when I say that continuously trying to plan meals that will please everyone can be very exhausting.  And, preparing meals only to hear complaints and throw half of it away because they won't eat it is maddening.

So, sometimes, when my hubby is out of town and I have to fix dinner quickly so we can get to other activities, I give myself a break and take the easy way out.  We just microwave some Velveeta shells or dump some canned soup and spaghettiO's in a pot.

Sometimes, I give in and make the ONLY meal that puts a smile on everyone's face; the ONLY meal that will elicit three separate "Yay!!" responses from all of my girls.

Sometimes we eat Pancakes. For dinner.


You can't exactly call it breakfast for dinner (brinner) because there are no scrambled eggs, no hash browns, no toast.  Just pancakes.


I do (sometimes) add some sausage and/or bacon for a little protein.  I really try to add a little fruit, too.  But, mostly, it's just pancakes.  And smiles.  And happiness.

When I make pancakes for dinner, I am the Best Mom EVER!!  (I know this because my kids told me so!)  Everyone is happy.  Everyone cleans their plate.  There are no leftovers.

I know a lot of moms (and dads) who stress out about providing perfectly balanced, completely healthy meals for their kids.  Believe it or not, I'm one of those moms.  Over the years, though, I've learned to relax about it a little.  My kids are healthy.  They are growing adequately.  Truthfully, they aren't any different from most other kids who prefer pizza over pork chops or spaghetti over lima beans.  (I do, too.  Don't you?)  So, once in a while, I think it's o.k. to ease up and give ourselves a break.  I think, occasionally, it's o.k. to just eat pancakes.  After all, if Bill Cosby (aka Cliff Huxtable) can justify feeding his kids chocolate cake for breakfast, surely it's o.k. for me to give my kids pancakes for dinner! :-)

I think it's an awesome idea! My kids would gladly eat pancakes for dinner. My quick go to meal is goood ole franks & beans. :)
