This is one of my family's favorite side dishes. It is pretty simple to make, very versatile, and everyone likes it. I have been making it for so long that I honestly cannot even remember where I found the original recipe.
Cheesy Orzo
(In case you are not familiar with orzo, it is a small, rice-shaped pasta. In this recipe, it cook in broth and absorbs the broth just like rice would do. I have also seen it used in recipes where it was drained as is typically done with pasta.)
Ingredients
1 16 oz. box of orzo
1 small onion, chopped
2-3 cloves of garlic, minced
2 Tbsp, Olive Oil
1- 1.5 cups of chicken or vegetable broth
1/2 cup shredded or grated Parmesan cheese
Step 1:
Heat oil in a sauce pan over medium high heat. Sauté the garlic and onion for a couple minutes.
Step 2:
Add the orzo and sauté it with the garlic and onion for just a minute.
Step 3:
Add the broth. Reduce the heat to medium low and cover.
Step 4:
After the pasta has absorbed all of the broth (approximately 8 minutes), turn off the heat. Stir in the Parmesan cheese.
Step 5;
Enjoy the ooey, gooey cheesy goodness!!!
As I said, this is a basic recipe that you could vary according to your own tastes. You could add in some chopped broccoli or some spinach. You could also toss in some chopped ham and frozen peas for a complete meal!

We totally love Orzo here, too and I usually use garlic salt and butter, but love the idea of adding cheese. I pinned to try your recipe, because it really sounds like a great way to serve orzo (and I do happen to love cheese, too!!). Thanks, Lisa :)
I love Orzo so much. And I'd probably add broccoli and some ham, and try to downplay them to my daughter but really I love adding veggies and meats so much to cheesy orzo. I want this. Now.

I threw in some peas once and my picky eater wouldn't touch it! I wish I could just throw in some chopped ham or chicken and some veggies to make it a whole meal!
