Sunday Supper - Classic Slow Cooker Roast

Many years ago, when I was first married and learning how to cook, I used the recipe on the back of a box just like this:


You see that "Slow Cooker Pot Roast" recipe?  That's the one I made and I made it exactly according to the directions.

Over the years, I have cooked a roast many different ways, but I always come back to this one.  However, I have modified it just a bit to suit my family.  You see, we prefer a big dollop of creamy mashed potatoes smothered with gravy rather than the veggies cooked in the crock pot with the roast.  Plus, my kids don't like cooked carrots.  Also, the recipe recommends browning the roast before putting it in the slow cooker.  I do this occasionally, but usually I'm in rush and just skip this step.  Personally, I can't tell a difference either way.  So, here is my version of the classic Lipton recipe. 

Classic Slow Cooker Roast 

Ingredients:
a 2.5-3.5 pound roast (I use eye of round)
2 Packets (1 box) of Lipton Onion Soup Mix
1 cup water
a splash of Worcestershire sauce

Step 1: Put the roast in the crock pot.  Mix all other ingredients in a small bowl and pour over the roast.


Step 2:  Cook on low for 6-8 hours.

Step 3:  Remove roast from crock pot and let it rest for 10-15 minutes.

Step 4: Mix 1/4 cup of water with 2 Tablespoons of flour and pour this into the liquid remaining in the crock pot.  Turn the crock pot up to high and let the gravy thicken.  

Step 5: Once the gravy is ready, slice up the roast and serve it up with the sides of your choice!

  4. Yum! The photo of the green beans, mashed potatoes and corn is driving me nuts. That's my favorite meal right there. Balanced! We had this last week - my brother is a chef and I hadn't seen him in three years and he said hello by making me a slow cooker roast. It was sooo good.

  6. Well I know you read my last post. I am so done with my crock pot. Nothing comes out "all that". Maybe chicken doesn't do well? I don't know. Everything falls apart and not in a good way. I'll have to ask my husband if he likes roast. But I definitely don't want to brown it first either ;-) Your plate looks very good. I couldn't make a pretty picture with any of my meals. Phooey.

  11. glad you linked up your recipe. I find when I brown the meat first and make it nice and goldeny brown, it just looks more appetizing.     Yes, total idiot here. LOL I have thrown away cash, put my iPhone in the refrigerator, left the cap off the gas tank and drove away. All just last week. :) 4 kids have destroyed my brain cells, but it's so worth it!

  15. oh no! I think I remember a book that came out a few years ago that argued that motherhood actually makes us smarter!! I'm sticking with that one! {though I can totally relate to 'mommy brain'!}

  20. Dumber! Especially with the current events thing because I can't stand when my husband blares the news at home. I don't want my kids hearing about any of that!! Mute.
    Also, today I parked at preschool dropoff and my friend parked next to me and said, "Nice parking job!" I looked back..and it was awful.
