Sunday Supper - White Chicken Chili

This time of year, when there's a chill in the air, I am always on the lookout for comfort food recipes that will warm the body and the soul.  It's an added bonus if they involve the crock pot.  So, I was searching Pinterest a couple weeks ago for a new soup-type of recipe and found this one which was originally published on a blog called Design Wine Dine.   Although it's called "White Chicken Chili," it doesn't end up totally white because of the taco seasoning.  It does, however, end up totally delicious!!  It was very easy to make, too.

White Chicken Chili

Ingredients:
1 1/2 - 2 pounds uncooked chicken, cubed
2 cans (15 oz each) of Great Northern beans, drained
1 can (15 oz) white corn, drained
1 onion, chopped
2 cloves garlic, chopped
2 4 oz. cans green chiles
1 can cream of chicken soup
1 can (14 oz) chicken broth
1 pkg. taco seasoning

Simply put all ingredients in the crock pot, stir together, and cook on low heat for 6-8 hours.

Garnish with toppings of your choice such as sour cream, shredded cheese, tortilla strips, and sliced jalapeƱos.

Enjoy!

  3. Pinned this one, Lisa - looks yummy! I love beans but I may have to leave them out if I want my kids to eat it. I suppose I could just heat up the beans separately and add them to mine. Thanks for the recipe!

  5. You could definitely dpi it that way, Dana. If they like other beans, you could sub black beans. Hope it turns out well!

  14. Your goals sound a lot like mine! What in the world are we hoping to attain with all this blogging we do? I love the writing and connecting with people, but is there more that I want out of this? I think so, but I couldn't begin to tell you what that is. Best of luck to you with your goals! They sound like a good start to finding the balance that I think we all crave.
