My kids love taco night. I love it because it's easy and everyone actually eats without complaining! Believe it or not, I have actually found a way to make taco night even better - chicken in the crock pot! This recipe is super easy and was also very yummy. Everyone enjoyed it and I will definitely be making it again.
Ingredients:
3-4 boneless, skinless chicken breasts
1 packet taco seasoning
16 oz. salsa (the jar pictured is 24. oz, but I didn't use it all)
Dump everything in the crock pot and cook on high for 4 hours or low for 6 hours.
Shred the chicken (mine was basically shredded after cooking). Put it in soft tortillas and add your favorite toppings.
Yummy!!!

I go through phases where I love hard tacos, and phases where I love soft tacos. Looking at the photo above, I'm definitely in a soft phase! Yum! I was just telling my husband I was going to go upstairs to search for Super Bowl recipes. In truth, I was going to read my friends' blogs. Coming here, I get to do both!
